Never underestimate the power of a tasty treat to lift your spirits. Recent example: I often send my test recipe creations to Jeff’s team at work so they can provide opinions and useful feedback. It’s definitely a win-win situation: they all get to indulge in decadent treats that surprisingly contain numerous health benefits, and I get honest critiques for tweaking and improving the recipe. Yesterday I made these Pumpkin Bars and my favorite comment was from Jamie. He loved the bars, saying ...
The Problem with Pound Cake
Is that I can’t stop eating it. I love pound cake for its plain, yet rich and elegant flavor. It’s the epitome of a short and simple ingredient list: flour, sugar, eggs, butter and maybe buttermilk or sour cream along with a few flavorings. I don’t bake pound cakes very often, but when I do, I have to really be mindful of how much I’m eating so I can adjust my exercise for the day. And next day, too. Which is what I’ve been doing the past two days. And will do tomorrow and hopefully through ...
Spinach Dip Sans Bread
Most spinach dips are a little too sparse on the spinach and way too overloaded with fat, in my opinion. So I took the traditional recipe and doubled the spinach and increased the onions – all to boost antioxidants and nutrient richness. Then, I switched the sour cream and mayo to low fat/reduced fat versions, and even replaced just a tad of it with plain yogurt to boost the calcium a bit. Now I realize that most people prefer to serve spinach dip in the hollowed out Hawaiian bread and it’s ...
Apple Salad for Thanksgiving
Fruit. It’s the one thing lacking on the traditional Thanksgiving menu. Well, fruit and color, actually. There’s a lot of brown and white going on…… turkey, stuffing, mashed potatoes, gravy, creamed corn and creamed onions. Not exactly a rainbow of colors. Cranberries are usually the only fruit – and color – for many traditional spreads. So think about adding more fruit dishes, especially those made with in-season apples, pears, persimmons and pomegranates. Here’s an easy recipe to get you ...
A Pumpkin Treat for Non-Pumpkin Eaters
Warning: even Pumpkin Haters may like this treat! It's a quick and easy way to combine all three fall favorites - apples, pears and pumpkin. Mix up a batch of this simple and healthy dip by adding an entire 15 ounce can of pumpkin to 1/3-less fat cream cheese. Season with cinnamon and some brown sugar and you instantly have an antioxidant-rich dip (beta-carotene from the pumpkin) to serve with fresh apple and pear slices. Any apple variety works, but my favorites are Jonagold and Honeycrisp ...
Double-Dipping Allowed
Need some inspiration on what to take to the next office pitch-in, weekend party or Monday night football get-together? Try a nutrient-rich dip, like White Bean Dip. It’s a great vehicle for eating more whole grains and vegetables! I love to serve this dip with 100% whole grain crackers - my favorites are Triscuits Reduced Fat and Kroger's 100% wheat squares - and a slew of fresh veggies, from carrots and celery to sugar snap peas, red, yellow & orange bell pepper strips and zucchini ...
Muffins & Making Money on Public Radio
One of my passions is public radio, so every spring and fall for the WFYI FM 90.1 fund drives, I volunteer to be in-studio and help with on-air pledge breaks. It’s one of the most rewarding things I do….such a great feeling when we’re able to meet a challenge or goal. Of course there’s a food angle, too. Since I absolutely LOVE to bake, I try to bake something and take it for everyone I’m working with that morning, especially Scott Hoke (he eats more than anyone). Sometimes I try ...
Time for a Big Bowl
It’s chili time! Chili is the first thing I think of when fall rolls around. It has all the right things from a nutrient standpoint: fiber, antioxidants and lots of disease-fighting and immune-boosting nutrients. But best of all, chili is filled with comfort and warmth. Chili isn’t chili in my book unless it’s hot and spicy and packed with far more beans than meat. My husband Jeff tells me it’s the best chili he’s ever had, but I’m not gloating because I know that everyone has different ...
